I made the most amazing pumpkin muffins over the weekend. They were too good not to share the recipe on here . Speaking of the recipe, it tells me that each muffin is only 77 calories. The muffins are so good that I don’t know how that could possibly be true, but I guess it makes sense. The ingredients are an egg white, water, canned pumpkin, and spice cake mix. I promise you that even if you always burn or ruin baked goods you will be able to do these muffins. They take about 15 minutes to bake and 5 minutes to prepare. Easy, fast and healthy. Then bake. I baked mine for about 16 minutes. The recipe says 12-18 minutes. The finished product looks like this:
So light and fluffy. Extra points if you burn a pumpkin spice candle in the background while you eat them like I did.
You can also ruin some of the healthiness of the simple muffin recipe by adding cream cheese frosting. It’s worth it because they are SO GOOD this way:
